Aktualna tematyka badawcza:

  • interakcje leków z natywnymi i genetycznie modyfikowanymi składnikami żywności,
  • czystość enancjomeryczna jako kryterium jakości leków, nutraceutyków i farmakoterapeutycznych składników żywności,
  • mikro- i nanosensory do skriningowego oznaczania pozostałości leków i hormonów w żywności,
  • charakterystyka właściwości naturalnych i syntetycznych materiałów nanokrystalicznych i polimerów,
  • infekcje bakteryjne i wirusowe w etiologii otyłości u człowieka,
  • bezpieczeństwo zdrowotne żywności biofunkcjonalnej i nutreokosmetyków z fitokomórek macierzystych,
  • analiza metabolomiczna i proteomiczna w badaniach farmaceutycznych, biomedycznych i żywieniowych.

Katedra i Zakład Bromatologii CM UMK uczestniczyła w latach 2004-2013 w pracach międzynarodowych sieci tematycznych: chemii żywności InterFoodNet, chemii supramolekularnej Global Supramolecular Network, spektroskopii biomolekularnej EU-NMR, a także była zaproszona do realizacji Narodowego Programu Zapobiegania Nadwadze i Otyłości POL-HEALTH.
